OK, please could someone either tell me how to do this:

I have my web site, and a lot of the parts people vote in polls, and at the moment I am doing it by saving the results to a text file, and putting it in myself. Could someone tell me how to do it so that when they vote it sort of adds it to the count. They normally have two different options you can go for, and i want it so it adds one vote to the tally next to whatever option it is.

Can anybody either tell me how to do this, or at least what its called?
