I looked all over and there are no documents on how to use MS SQL on the system. When I go to the HELP control panel and select database, only MySQL and Aceess are options. Where can I get some documentation on this?

is the documentation for Mysql.

My guess is you need to know how to use it with cpanel... Hit up help.hostony.com linked from Support.hostony.com as well. It has tutorials on how to setup Databases etc...
